How to Make Creamy Roasted Butternut Squash Soup
1 3-4 lb butternut squash
1 yellow onion
3 large carrots
2 heads of garlic
nutmeg
salt and pepper
thyme
rosemary
2-3 cups of chicken broth
1 can of full fat coconut milk- Use Thai Kitchens coconut milk! Pictured here
Instructions
1. heat oven to 425, cut butternut squash length wise and clean out seeds, peel onion and cut into fourths, cut tops off garlic, peel carrots.
2. put all veggies on lined cookie sheet, drizzle with a good amount of olive oil, season with salt pepper, thyme and rosemary. Bake for 40-45 minutes until squash is tender.
3. Once veggies are done, scoop out squash and sqeeze out garlic from skin, put all veggies. 1/2 can of coconut milk and 2 cups of chicken broth into blender. May have to work in batches, and be very careful with hot liquid in a blender. You could also use and immersion blender here. If soup is too thick add more chicken broth until it is the consistency you like.
4. put into soup pot, and bring back up to boiling, add in nutmeg to your liking along with more salt pepper and little dash of red pepper flakes if you like heat!
5. dish up and add another drizzle or two of your left over coconut milk.
