Chewy Chocolate Chip Granola Bars

If your kids are like mine they LOVE granola bars. Being home for summer they’re slowly, well rather quickly actually, eating me out of house and home! Most people around us know I’m a bit Granola myself (see what I did there?! Haha mom jokes). I enjoy making homemade things and knowing what is in our food. I hope you enjoy these like my family does.
This recipe is extremely versatile and you can add or remove whatever ingredients. I change it up depending on my mood. 

4 cups oatmeal
1 heaping TBSP of your choice flour 
(I use bread flour, you could use coconut flour to keep it gluten free)
1 tsp salt
1/4 cup sweetener of your choice 
(I use cane sugar or coconut sugar)
1/4 flax meal
2 TBSP chia seeds
1/4 cup coconut shreds
1 cup chocolate chips
1/4 cup chopped dates
1/2 cup neutral oil of your choice. 
(I use coconut or avocado)
1/2 cup of honey OR maple syrup
1. preheat oven to 325
2. Mix together dry ingredients 
3. whisk together your oil and honey until emulsified 
4. pour wet into dry and mix until it’s all coated
5. line a jelly roll pan with parchment paper and put your mixture on it. Press the mixture together, into a rectangle.
**note** in my 11x18 pan it takes up about 1/2 the pan. I make it as thick as the pan is and press it until it is as uniform as possible.
6. bake for 30-33 minutes
7. take out of oven allow to cook completely and cut into bars! Store in an airtight container.
