Have you ever been to Starbucks and gotten their egg bites? They are probably one of the only things I like there ( I know weird!) I am just not a Starbucks girlie. Honestly, I don't really ever buy coffee out. These eggbites though are so tasty but SO EXPENSIVE! Let me share how I make them at home. I always have these ingredients on hand. Thankfully, because we are doing a no spend January and I'd be sad. This recipe is also SO EASY TO CUSTOMIZE!!
- 6 large eggs
- 1 cup cottage cheese
- 1/2-1 cup cup shredded cheese (your choice of variety)
- 1/4 cup milk
- 1/4 cup cooked and crumbled bacon (optional)
- 1/4 cup diced vegetables (such as spinach, bell peppers, or mushrooms also optional!)
- Salt and pepper to taste
Instructions
Step 1: Preheat and Prepare
Preheat your oven to 325°F (163°C) and lightly grease a muffin tin or silicone egg bite molds.
*tip* put your molds or pan on a jelly roll pan prior to filling it. This makes it easier to move your liquid eggs**
Put a pie pan or 9x13 pan on the bottom rack and add about 3-4” of hot water to the pan. This will help the texture of the egg bites while baking!
Step 2: Blend the Ingredients
In a blender, combine the eggs, cottage cheese, shredded cheese, milk, and a pinch of salt and pepper. Blend until smooth and well combined.
Step 3: Customize Your Bites
Divide the bacon and diced vegetables evenly among the prepared muffin tin or molds. You can mix and match your favorite ingredients to create different flavor combinations.
Step 4: Pour the Egg Mixture
Pour the blended egg mixture over the bacon and vegetables, filling each mold about 3/4 full.
Step 5: Bake and Enjoy
Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top. Allow them to cool for a few minutes before removing them from the molds.

These Starbucks-inspired egg bites are perfect for meal prep. Here are a few tips to help you incorporate them into your weekly routine:

Double or triple the recipe to make a larger batch of egg bites. This way, you'll have plenty to enjoy throughout the week.

Once the egg bites have cooled, portion them into individual containers or resealable bags. Store them in the refrigerator for up to 4 days or in the freezer for longer-term storage.
3. Reheat and Enjoy
When you're ready to enjoy your egg bites, simply reheat them in the microwave or oven until warmed through, or in the air fryer! They get a little crispy on the bottom this way and its to die for!
