Cheesy Chicken Tacos

This recipe is a regular on our rotation! It is an easy, relatively quick, kid friendly dinner!

3 lbs chicken breast diced 

olive oil 

2 packets taco seasoning

1 packet ranch powder

1 can rotel

taco sauce of your choice

3 oz cream cheese

2 cups shredded cheddar cheese 

1 pack of 24 extra thin corn tortillas

 

1. preheat your pan add in 2 tablespoons olive oil. 

2. while pan is heating, dice up chicken into small cubes. 

3. add chicken, taco seasoning, and ranch powder to pan. You can also make your own taco seasoning to control sodium

4. Once chicken is cooked, add in rotel and cream cheese, 2 tablespoons of taco sauce. Allow to cook another 10 minutes until the liquid is mostly cooked out and it’s like a thick sauce.

5. preheat electric skillet or another pan. Add olive oil.

6. assemble your tacos! Add tortilla to hot skillet, add a tablespoon or so of cheese and a couple tablespoons of chicken mixture. Fold in half and cook until crispy. Flip and do the same to the other side. *you will have to add oil every couple tacos, it is what crisps them up*

7. serve with onions, cilantro, sour cream or whatever your heart fancy’s
